Gemma's respect and appreciation for produce stems from childhood, where she was spent many years on a farm in the heart of the English countryside. Her passion and dedication to the culinary world has seen her travel the globe in search of experience, including Switzerland, Greece, France and Asia, before finally arriving in Australia and calling it home.
As a Chef she has made her mark in the hospitality scene both overseas and in Australia. A love of Asian produce and fusion food has seen her work in venues such as NOBU London, The boutique hotel Macalistair Mansion in Malaysia and The Serai in India. Locally Gemma has worked as a Sous chef for the Four in hand hotel, as well as spending 3 years working side by side with Peter Gilmore as Junior Sous at his restaurant QUAY.
With a depth of knowledge and the creative love of produce and cooking, Gemma wants to bring all she has learnt to your bespoke function through Dallyn and Kerr.
Sera grew up in Cape Town and has been surrounded by food and hospitality her whole life. Having a mum who was a chef and a father who loves cooking, food was a quintessential part of her life. After moving to Sydney from New Zealand in 2000, she began her restaurant career.
Eventually moving into a more fine dining front of house role, Sera has successfully worked in some of Sydney's finest restaurants including The Bridge Room, Bentley Restaurant and Bar and The Four In Hand Dining Room.
She has also helped in the start up of several venues to name a few, The Bucket List, Drake Eatery and Chur Burger.
As a key member of Dallyn and Kerr, Sera will bring first class service and knowledge including refined customer service to your function, allowing the event to run smoothly and with elegance.
